How to prepare Kammani Payasam..
Preparation of Pesarappu and Atukula..
First light the stove and put a pan. Add quarter cup of fenugreek seeds to it and deep fry it on low flame. Payasam gets its original taste only when the dal is roasted until it smells good. Put the fried pesarapapu in a vessel or pressure cooker and cook until soft and keep aside. On the other hand, rinse a cup of oats thoroughly with water and soak for just five minutes. If the pastes are soaked for too long they will become mushy and spoil the look of the payasam.
Preparation of jaggery paste, mixture..
Now grate jaggery in a bowl, add enough water and dissolve it well. If there are any lumps or impurities in the jaggery, it is better to strain the water into another container. After that, add the cooked pesarapa and the soaked paste in a big bowl and mix well. Put this mixture on the stove and let it simmer on low flame for five minutes.
Creamy texture.. dry fruits tadka..!
After the paste and dal are cooked well, pour the strained jaggery water into it and mix. At this point the flame should not be overheated under any circumstances. Pour a cup of boiled and cooled milk in it to make the payasam more creamy and rich. Finally sprinkle cardamom powder for good aroma. Add ghee in another small pan and fry cashew nuts, raisins and grated coconut until hot and add it to the payasam to prepare the hot sticky pesarapapu payasam.
This Atukula Pesarapapu Payasam is very beneficial for health as it satisfies the craving for sweets and removes fatigue. It can instantly remove dullness caused by sun exposure or office stress. Try this new type of payas at home this weekend and give your family members a healthy taste!
